Grandma’s Old-Fashioned Potato Salad Recipe

Ingredients:

Salad
6 cups diced potatoes (cooked in skins and peeled)
5 hard cooked eggs (save one for garnish)
1/4 cup SHREDDED onion, with juice
1/4 cup chopped onion
1/4 c. chopped fresh parsley
1 1/2 tsp. salt (or to taste)
1/2 tsp. pepper
 
Dressing:
1/2 c. sugar
1 tbsp. cornstarch
1 tsp. dry mustard
1/2 tsp. salt
3/4 c. water
1/4 c. apple cider vinegar
2 eggs, slightly beaten
1 cup mayonnaise (NOT salad dressing)

Preparations:

In a heavy saucepan mix all dressing ingredients except mayonnaise.  Cook, stiring constantly, until thick and bubbly. Remove from heat and cool.  Stir mayonanaise into cooled mixture.  I usually stir in the shredded onion, salt and pepper into the cooled dressing too to make it easier to mix the salad together.
Cool the cooked potatoes, peel skins and dice.  Add chopped onion, chopped hardcooked eggs and parsley.  Gently toss together.  Add dressing and gently mix.  Put into bowl and garnish with the remaining egg, more parsley and paprika.  Chill for several hours before serving to blend flavors.
